Black bean stew with rice

Ingredients:

  • Olive oil
  • garlic
  • chopped onion
  • green paprika
  • sweet paprika spice powder
  • salt
  • cumin powder
  • oregano
  • 2 cans of black beans
  • black pepper
  • boiled rice
  • coriander leaves (if available)
  • chopped chilli/jalepeno

Instructions:

  • Chop garlic, onion, paprika
  • heat oil
  • add garlic and chopped onion and sautee until onions are a bit brown
  • add paprika and sautee
  • add paprika powder, salt, cumin powder, oregano, black pepper and sautee for a few minutes
  • add drained black beans and water
  • let it boil for some time
  • serve with boiled rice

Pesto pasta

Ingredients:

  • Pasta
  • Pesto (either make your own or buy a small jar)
  • Pine nuts
  • Chili
  • Basil for decoration
  • Oil
  • Salad on the side

Instructions:

  1. Cook pasta
  2. Mix with pesto (how to make pesto instructions below)
  3. Pine nuts roasted and put on top
  4. Chili in oil
  5. Basil for decoration
  6. Any salad on the side.

Chia pudding (dessert)

Time: 10 minutes to prepare and 4 hours in fridge

Ingredients:

  • 1 can coconut milk (or any other milk)
  • 4 tablespoons chia seeds
  • honey
  • vanilla extract
  • mixed berries of choice

Instructions:

  1. In a container, combine the milk, honey, chia seeds and vanilla extract. Stir thoroughly until combined well.
  2. Pour mixture into a jar and refrigerate until it reaches the desired thickness (about 4 hours)
  3. Serve pudding with mixed berries sprinkled on top.

Aglio Olio (oily spaghetti and chili)

Ingredients:

  • olive oil
  • sliced or crushed garlic
  • chilli flakes
  • salt
  • parsley (optional)
  • sundried tomatoes (optional)
  • boiled spagetti
  • reserved pasta water or regular water
  • parmesan cheese
  • salad

Instructions:

  1. Heat oil in a pan
  2. add garlic and sautee for a few seconds. Don’t let garlic get crispy or burn
  3. add chili flakes
  4. add ½ cup pasta water, salt and chili flakes
  5. let it almost evaporate
  6. add pasta and parsley and mix
  7. grate parmesan
  8. eat with salad

Tofu Rice dill

Quantity: 2 servings
Time: 30 minutes

Ingredients:

  • Tofu
  • Turmeric
  • Olive oil
  • Salt
  • Pepper
  • Rice 1 cup
  • Water 1 ¾ cups
  • Dill ½ cup
  • Peas
  • Salt
  • Yogurt

Instructions:

  1. Fry tofu with turmeric, oil, salt and pepper.
  2. For the rice, cook rice with dried dill and peas. Add salt and olive oil.
  3. Optionally serve with yogurt on the side.

One-Pan Mexican Quinoa

5 servings
30 minutes

Ingredients:

  • quinoa: 1,25 cups,
  • Or quinoa+Rice: 2 cups
  • diced tomatoes (spicy if you’d like): 1 can,
  • black beans: 1 can,
  • corn: 1 can,
  • lime juice: 1 tablespoon,
  • Or lime: 1
  • avocado: 1,
  • chili powder
  • black pepper
  • salt
  • garlic powder
  • cayenne pepper

 

Instructions:

  1. Big pan. Add quinoa, 2.25 cups of water, tomatoes (don’t drain)
  2. Bring it to boil and them simmer for 12-18 minutes until the quinoa pops open.
  3. Drain black beans and corn and put into separate bowl. Add lime juice.
  4. Dice avocado
  5. When quinoa is done, add bowl and spices to taste
  6. Add avocado as topping

Veg sausages with mashed potatoes

Time: 15 min

Ingredients

  • Veg sausages
  • Mashed potatoes
  • Lingonberry jam
  • Spices for veg sausages and mashed potatoes
  • Salad

Instruction

Heat sausages in frying pan and add spices. Heat mashed potatoes in microwave.

Indian ready-made daal with rice

Instructions:

  • Ready made daal according to packet
  • Some rice
  • Some sallad

Vegan nuggets with oven potatoes

Time: 30 minutes (10 minutes active time)

Ingredients:

  • Some veg nuggets
  • Potatoes or fries
  • Some sallad

Instructions:

  1. Potatoes in the oven
  2. Make the sallad
  3. Nuggets in frying pan when their is 10 minutes left for the nuggets to get done

Minced quorn with pasta

Time: 30 minutes
Quantity: 5 portions

Ingredients:

  • 1 pkt of minced quorn or similar
  • 1 can of black beans
  • 1 red onion
  • Tomatoes. Either cubed in a can or 1-2 fresh ones.
  • Pasta
  • Some spices like:
    • Vegetarian stock
    • Oregano
    • Garlic powder
    • Paprika powder
    • Chili flakes
    • Salt
    • Black peppar
    • Whatever you have home. Experiment.
  • Some sallad or vegetables on the side
  • Oil

Instructions:

  1. Start boiling the pasta. Usually 9 minutes. Leave a bit of warm water in the boiler for later.
  2. Chop the onion and sautee in a big pan with oil till they get a bit brown
  3. Chop tomatoes and throw into pan
  4. Drain the can of beans and put into pan
  5. Add water from boiler if necessary
  6. Put spices in the pan until it tastes good
  7. Prepare the sallad while everything else is cooking
  8. Drain the pasta and serve next to the mince and some sallad
